  • 3x 8oz cans of minced clams
  • 1/4 cup olive (or salad) oil
  • 1 garlic clove, minced
  • 3/4 cup chopped parsley
  • 2 tablespoons white wine (optional)
    • Sake makes for a nice variation
  • 1 teaspoon basil
  • 1/2 teaspoon salt
  • 1 tablespoon butter (optional)

About 20 minutes before serving, drain and reserve juice from clams. In medium sauce pan over medium heat, in hot olive oil, cook garlic until tender. Add white wine at this stage and reduce. Stir in reserved clam juice and remaining ingredients except for the clams. Cook 10 minutes, stirring occassionally. Stir in drained clams, cook just until clams are heated through.

Makes about 3 cups, or enough to serve over 16 ounces of spaghetti, cooked, for four main dish servings.
